As most of you know I’ve lost 40 lbs on Slimgenics, and I’m extremely thankful for the program, the counselors, the friends I’ve made via the program online and here at home…..but, I’m done.

No, I’m not done losing weight, but I’m done with Slimgenics…the time for a super strict…can’t have bananas, melons, avocados & carrots plan is over.  I’ve learned some excellent fundamentals from Slimgenics about eating a high protein, lower carb, low glycemic index diet in order to lose weight quickly…..but this is not something I’m going to survive on. I need to learn to lose and then maintain using the much more open, easy to work into intense workouts, group support atmosphere of Weight Watchers. I’m toying the idea of getting to goal and then applying to be a leader….that’s how much I like Weight Watchers.

You may ask: “Well, why haven’t you gotten to go before on Weight Watchers, Meredith?”  My answer is that I truly wasn’t in the right place to have balance yet…I was only in a place for quick solutions. Now, my life is balanced..I exercise…and its FUN….the majority of my friends and all of my family  have a healthy lifestyle…and, well I’m ready. I’m ready to have more choices…..I don’t need the restrictions anymore.

I’m excited that Liz @LutherLiz has a meeting that I can attend with her….she is super motivational and inspiring to me..and that extra push of having a friend in the meetings is just what I need!

So, on to Weight Watchers…tomorrow morning!

Priorfatgirl Dawn is having a McCormick Recipe Refresh Contest through November 2nd! This is my blog post for the recipe I refreshed with McCormick spices!

As most of you know I’m using the Slimgenics program to lose weight and so far I’ve kept 38 lbs off, but I have more to go!

There are some limitations on Slimgenics, so I can’t have what you’d call a more traditional pot roast recipe…carrots and white or yellow onions are a no-no to those of us in the weight loss plan.

I *love* the new McCormick Perfect Pinch salt-free seasonings that have been showing up recently, I got to try quite a few at Fitbloggin ’12 as well.

I refreshed a salty, old-fashioned pot roast recipe to make it McCormick & Slimgenics worthy!

Yummy Pot Roast and Broth

Crockpot Pot Roast

Prep Time: 10 minutes

Cook Time: 4 hours OR 8 hours

Ingredients:

  • Small Roast (3-5 lbs)
  • McCormick Perfect Pinch Garlic & Herb Salt Free Seasoning
  • Morton’s Light Salt (OR regular salt)*
  • Olive Oil
  • 4-5 green onions
  • 4-5 stalks of celery
  • 4-5 red potatoes
  • Slimgenics Chicken Bullion Soup Mix Prepared  (OR 18 1/2 ounces of chicken broth)*

*using regular salt/standard chicken broth is also VERY TASTY, but is not Slimgenics approved

Directions:

  1. Rub Olive oil all over the roast, enough for a light coating
  2. Sprinkle a generous amount of McCormick’s Perfect Pinch Garlic & Herb Salt Free Seasoning on all sides of the roast
  3. Sprinkle salt on all sides as well
  4. Place roast in your crock pot
  5. Chop up green onions, celery and potatoes, then place around the roast
  6. Add in chicken broth

Cooking:

Two options:

  • Set on high for 4 hours, check after 3 if you want medium rare, otherwise after 4 hours you should get medium well
  • Set on low for 8 hours, if you can check after 6 hours you could stop for medium rare, othewise after 8 hours it’ll be medium to medium well.

Temp guide:

( These are NOT USDA recommendation numbers, these are the chef recommended temps for doneness)

  • 130 degrees – medium rare to medium
  • 145 degrees – medium
  • 160 degrees – medium well
  • 170+ degrees – well done

First…popchips, win them til Oct 5.

So, I may have not done the “stopped posting cause I’m not seeing results” thing that does happen to many bloggers….but I did do that “leeeeet’s keep it to myself that I gained weight back” thing. I didn’t go onto MyFitnessPal, like I had been, religiously, after every weigh in at Slimgenics..and update my gains. I was kinda embarrassed…everyone was so proud of me for losing 50 lbs…and at first I kinda just yo-yo’d…you know…down 50 lbs, down 48 lbs, down 49 lbs, down 47 lbs…then…it kinda went more like down 45 lbs, down 43 lbs…and yup…I’m down 38 lbs..even though I was 2 lbs away from 50 before my birthday.

Guys…summer is hard. Its not an excuse…its just a share…cuz I know the rest of you sometimes feel this way, too.

I actually don’t feel like winter holidays are as challenging as fun, spontaneous, bbq, boat ride, camping, fair, and concert filled summers. There are SO MANY freaking guides and tools for winter…the best foods to eat for holidays…how to avoid halloween candy, what’s the best way to fill your plate on thanksgiving. Plus, seriously, those holidays, at least to me are A DAY. I can hunker down and get tough on myself for A DAY..and do the positive self talk and food prep and planning.

BUT A WHOLE SUMMER…oh goodness, its been hard. Thank the bejeezus I only gained 10 lbs. Fortunately I didn’t have to go back to fat pants or something like that..but I noticed a little more annoying “flub” hanging over the waist line…my little tshirts that were finally super cute were looking a bit too floppy..you know the drill.

It also didn’t help that Ryan (my fiance), had hit maintenance…and while its still hard…he got to switch to just watching his balance of food groups and counting calories..he had no more “no-no” foods that Slimgenics blocks while you are in weight loss mode. I wasn’t eating out of spite that I was still on plan or something…I just was a little to “lax” with the rules…and it bit me in the butt! Until I reach a good lean body mass…my body isn’t as good at maintaining fat loss..and we all know fat attracts fat!

So NOW…I am going to buckle down….I’m going to get to goal by Thanksgiving…EYES ON THE PRIZE…I have to fight through Oktoberfest this weekend, Renaissance Festival, too. Some birthdays, some family events…even BEER SCHOOL…but I will DO THIS. Who’s with me?

Yesterday at Slimgenics I officially hit the 40 lbs down milestone.

I’m not done yet, but I’m almost there. I’ve learned so much from Slimgenics about healthy ways to quickly prepare meals at home. I’ve overcome cravings and how to make healthy “treats.”

The foods I miss have changed since I started back in January. I was missing pizza, ice cream, mac ‘n cheese and chocolate.  It’s not like I will never eat those again…but what I’m truly hankerin’ for now are healthy foods that just aren’t part of the Slimgenics plan and I’m not worried about adding them back like avocado, melon, cheese, carrots, white onion, and whole wheat pasta.

I’m also excited to be able to run more and train to be faster once I can pre-fuel and re-fuel runs a bit better. Right now my carbs are limited so I run out of steam at about the 45 min mark. I don’t have to stop, I just slow down quite a bit. I can’t have Gu, Gatorade, Bananas, Chocolate Milk, or peanut butter on Slimgenics so you runners can see my difficulty.

Fortunately, due to my weight loss and training I have done I can get a lot further in 45 mins than I used to!  A 5K used to take me 50 mins, now its more like 37 mins! Woo!

I told you guys about the jelly beans a couple weeks ago.  I made that decision..it was a few jelly beans…and it didn’t affect my weigh ins the following week…but even if it had..I was cool with it…I made a purposeful decision to have a few jelly beans.  My boyfriend made a decision to have some lemon heads…and we moved on….it was cool..and its in the past.

So, last night I was out to dinner with my girlfriends…at a mexican restaurant…we picked it as our version of a little Cinco De Mayo get together.  We went to A La Salsa at Midtown Global Market…great place, lots of choices…lots of authentic mexican food..you can have chicken, fish, steak, grilled veggies, cactus leaf stuff, tamales, rellenos, enhiladas…they have the stuff americans want..the mexican classics…and some fabulous traditional mexican dishes.

I made my decision….a mole covered 1/4 chicken (white meat) dish. It came with corn tortillas…I was going to have one (that is on my plan)…not eat any rice and have grilled veggies and no beans.

Well….then there was corn chips in front of me.  I went over the menu…looked at the corn chips…my friends can vouch for me, I didn’t dive into the tortilla chips as soon as we sat down…I stated “let me look over the menu and see if I can have some chips”.  I shouldn’t have even done that….fried, fatty corn tortilla chips DO NOT equal a fresh corn tortilla Meredith…WHY are you even thinking of switching them out….

..but I did…I haven’t had a CHIP since January..I decided I could have a few…instead of the corn tortilla…so I did…and I didn’t feel guilty..and I moved on.

Well…now its the next morning…I dunno if I’m guilty, or if I’m sorry that maybe the scale has “caught me in the act”.  I don’t feel like having a few chips..and honestly it wasn’t very many, my friends could tell you that…not even half of the little basket…I counted, I had maybe 10-15…honestly.

I think I’m just PISSED that the scale isn’t down like it normally is on Saturday mornings…UGH, I depend on my Saturday mornings as a nice loss as a push through the week….I lose  little during the week, too..but its Saturday mornings that are my big loss, the one I officially record, etc.

I’m the same as I was last night…and MORE than I was last Saturday…like by almost two pounds. I also have TOM coming up so that’s fighting me as well.  So I’m sitting here saying “why did I do that? why did I have chips?” but its not because I don’t think it was okay to have chips, but because its making me mad at my weight and the scale. YES, I’m still down just shy of 40 lbs…..but UGH…stupid scale.

I’m going to have some cleansing tea, a tablespoon of apple cider vinegar, drinking hot lemon water now..maybe it’ll take the “edge” off some of this bloating….going to weigh in at Slimgenics in about 3 hours…wish me luck…..

So, what’s been going on lately? Lots!

I’m officially down 35lbs which feels really good. I can see the definition that I’ve been working on for the last couple years of weight lifting actually starting to emerge from under the fat. I’m really excited to finally see that change. I’m still surprised when I put on a shirt and my tummy doesn’t stick out automatically. My default stature so to speak no longer has a tummy pooch, it’s so weird!
My boyfriend said to me last night that I’m probably a lot closer to bikini ready than I think I am. Woohoo!

Per our initial Slimgenics body type, height etc estimates I still have 25 lbs to go…but I dunno, I can see 15 coming off my butt and hips, perhaps the rest is just here and there and internal? My body from my true waist up is pretty good, my trouble area is the bad-donk-a-donk and it has a bit more to go for sure ;)

This last week I had two days of Slimgenics “detox” and boy, a good way to appreciate the main Slimgenics plan is to be on two days of a stricter version of it! Detox days include a whole grapefruit as breakfast, lettuce only salads with apple cider vinegar and a bit of dressing with lunch and dinner, chicken and parsley for lunch, fish and parsley for dinner and 2 cups of cucumber slices with apple cider vinegar as a snack, plus two of the low calorie thermogenic snacks. I wasn’t hungry, but I also didn’t have enough energy to run, so I had to skip a day. I definitely did feel like the detox cleared me out and I definitely had a nice weight loss whoosh the day after I finished detox.

One of my counselors did advice that Ryan and I eat beef more often and we can’t argue with that, yum! It is a limited food item so we have to space it out, but now we are definitely including steak or ground sirloin into our meal plans at least once a week if not twice!

I was having trouble with being hungry and even getting headaches on the days when I ran…and Slimgenics now allows 6 ozs of Greek yogurt your milk serving and not just as a protein. So, we figured out if I eat Greek yogurt as a small breakfast before I workout, replacing my daily milk, and then after my workout I have eggs and then my 2nd protein for dinner….I’m refueling my body a lot better than a protein bar or starches can and it has worked out really well for me! Yay more yogurt and protein!

Last weekend I took a big step and cleared out all of the clothes in my closet that are too big. All that stuff was actually pretty nice because I bought most of it last spring, summer and even fall of 2011 when I was at my highest weight ever. Those clothes were not just baggy on me but literally wouldn’t stay on….so time to admit I would never be back in them and to get them out! My closet is pretty empty now, but at least everything in it I can actually wear. I am slowly refilling it with clothing items I have had stored away that are starting to fit again which is exciting! But, I’m kind of at a stage right now where the saved clothes are about 1 or 2 sizes too small…I may have to buy a pair of work pants to help in between, I’m thinking Old Navy sale rack! But boy am I looking forward to wearing my Ann Taylor, Banana Republic and Express pants and tops again soon!

Since my PR in running outside two weeks ago I have successfully done more 3 mile runs with an under 13 min mile average and now my standard run length is 3 miles. Woohoo, my practice runs are 5ks, that makes me feel pretty cool. My first 4 miler is coming up next week if I don’t miss any runs this week. I hope I can do them all!

Tomorrow, for the first time ever in my life, I will be trying on a formal dress that is not a plus size! I’m going to be picking my bridesmaid dress for my best friend’s wedding, I’m sooooo pumped! For the wedding and that I have more choices and I just don’t have to go with the “kinder” dress styles, we have a few to pick from.

I want to give a shout out to my marathon relay girls – Corryn, Amanda and Kelly! We are SO gonna rock the Minneapolis Marathon, I’m so lucky to know you girls and I truly value our friendship and the fact that we can sweat together, too! Woohoo!

Okay this has gotten long, so I will say next week is a Slimgenics biogenic week then fresh start weekend so we get bigger protein servings, no starches and smaller snacks M-F and then unlimited protein, only green veggies and no starches on the weekend. I’m actually looking forward to it for two reasons #1 This week leads to a nice weight loss whoosh the following week and #2 It comes just in time for sushi on Friday night…woohoo extra sushi and a BBQ for my sister’s bday on Sun…yessss more steak and chicken please!

Hi hi!

I’m halfway through my weightloss at 30 lbs down with another 30 to go.  I’m actually not halfway through my weeks at Slimgenics though! My program with them is 28 weeks..and I’m on week 10…but halfway done losing! Woohoo!

My jeans started really getting baggy and awful and so I used a Living Social deal for the House of Amore & Fede in Edina and bought two new pairs.  One pair fits now, yay no more saggy! I also bought a pair that is another size down :)  The 2nd pair I bought are Miss Me brand and Amore & Fede lets you exchange them back in for an in store discount if they are gently used.  So when I shrink out of those, I can go back and get more with another discount!

I just wanted to let you guys know about how I was doing and that I’m so happy to have new jeans! Oh, they are 2 sizes smaller than my previous jeans! YAAY!

I’m also training for a 10K because my next race is a 6 mile portion of the Minneapolis Marathon on June 3rd.  I’m using SmartCoach from Running World Magazine to plan out my training and I love that, too! Plus, per usual I’m lifting weights twice a week.

This weekend was wonderful….the weather, a run and relaxing.

I started out my weekend with a yummy dinner at Tavern on France with my friends. They have a tasty build your own salad there so I can make it right on plan with Slimgenics. On top of the big base of romaine lettuce I chose to skip the cheese and “crunch” choices. I did choose to have grilled portabello mushrooms and beef tenderloin slices :) I also ordered a side dish of roasted red potatoes, mmmm!

We decided to grab lattes and gather around a BONFIRE, yes a bonfire in my back yard, in March at night! It was around 74 degrees at 10pm, yay!

I cashed it in early though so I could get up at 7am for the Get Lucky 7K! The day was beautiful and the race route was two, we started in downtown Minneapolis and ran over the Mississippi twice. The race had something like 7,000 runners! I ran the whole thing, but very slowly. But I did it! I’ve never run further than a 5K, not even in a practice run! I came in under 60 minutes, which I thought rocked for me! I kept within a 13:30 min mile. I finished and I got my medal. Next race: 6 miles of the Minneapolis Marathon for my portion of the relay.

For St. Patrick’s Day I wanted to enjoy a green drink, but this year I wanted it to be healthy and I wanted to refuel from after my run, too! So I had a GREEN monster shake! Two cups of spinach, about 12 strawberries, a dash of stevia about 3 ounces of Diet Cherry 7UP and its Healthy and Happy St. Patrick’s Day!

The only thing I could think about yesterday all day was how badly I wanted to go home and get outside and go running!  Yeah, I’m officially a running dork :) I may not be super fast, but I can run and I love it!

Instead of thinking about that I have to run or have to make an exercise plan or have to get minutes in…all I thought was…its beautiful out, its not windy, its sunny…I want to put on my sneakers and hit the pavement!  Woohoo.

I ran a 5K this weekend and it was OK, I think with Slimgenics I kinda run out of juice when I hit the 30 minute mark, just cause I can’t super fuel myself up due to having to spread out my food through out the day…I don’t get more food just for exercising. But, its okay I still finished, with a few hills and lots of wind in 40 minutes…I’ll take that :)

I have another race on Saturday, the Get Lucky 7K…to celebrate St.  Patrick’s Day this year I’m running a 7K instead of drinking beers! Woohoo! :)  I am actually going to bring water with me for this race and cut it with a tiny bit of G2 (that’s the no calorie Gatorade), so I don’t completely poop out at the 40 minute mark when I have another 20 minutes probably left.

I was up at my weigh in today, but I’m right on track with plan..so I think its just that lovely monthly water retention…I weigh in 3x a week so I’m sure it will rectify itself by Friday when I weigh in again :) I’m still like 26 lbs down, so that’s nothing to sneeze at :) I hit my 25 lbs down mark and rewarded myself with a manicure :)

Ooh…also I put on a pair of my smaller PANTS from my “smaller stuff” bin…YAYAYA! Size 12 baby! I have already been able to wear smaller sized tops, but this is the first smaller sized pair of PANTS!!! I also had to stop wearing my original weigh in khakis cause they were like falling off me…so its a good thing I had a pair to replace them with!

Alright that’s what I got!
